OYSTER With APPLE VINEGAR

Ingredients

  • Oysters
  • Japanese Radish
  • Apple

seasoning

  • Tosa vinegar (homemade)
  • salt

How to make

  1. Please choose the fresh oysters.
  2. Oyster rub lightly with the white grated radish and the salt, andremove dirt.
  3. Wash an oyster, and remove the salt.
  4. Cut the radish into long thin strip, and wash the water.
  5. Rub the apple, and take it down.
  6. Mix ⑤ with the apple vinegar, and make the apple vinegar.
  7. Soak the oyster in ⑥ overnight.

Tosazu (Tosa-vinegae)

  1. Put the seaweed into the bottom of pan.
  2. Mix 5cups of the Japanese soup stock, 2cups of the sweet sake, 3 cups of the rice vinegar, 1cup of the Light color soy source, and simmer it.
  3. When boiling ②, and take out the kelp.
  4. Doing insert dried bonito.

WHAT IS SASHIGATUO (INSERT SRIED SLICE BONITO)

Mix seasoning and cook once、by doing a SASHIGATUO into the seasoned soup, the taste will be even better. And It is often used to make soups such as TEMPURA – DASHI, IREDASHI etc.

How to make THE SASHIKATUO (INSERT BONITO)

  1. When seasoned the soup stock boiled, put a dry sliced bonito into the pot.
  2. Lower the heat once, cook it over a low heat, and stop the heat, wait until a dry sliced bonito sinks.
  3. A dry sliced Bonito sinks, filter it through a lead and coolit.
