FRIED FIG WITH RIKIYU AN

The season of the fig is from May to November. This time, we introduce how to make Fried Fig With RIKIYU AN.

Ingredients

  • Fig
  • White sesame
  • Starch
  • Dried Slice Bonito

Seasoning

  • Japanese Soup Stock
  • Sweet Sake
  • Light color soy source
  • Japanese Sake
  • Rapeseed Oil

How to Make

  1. The fig chooses the well ripe matter, and peel the Fig’s skin.
  2. Covered the starch with the fig.
  3. Fry the fig in the rapeseed oil of the medium heat oil.
  4. The white sesame roasts it once.
  5. Rub the white sesame until by using the mortar.
  6. Mix 8cups of Japanese soup stock, 1 cup of sweet sake, 1 cup of soy sauce, and simmer it, and make a IRIDASHI.
  7. Insert dried slice bonito.
  8. Put ⑤ into ⑥.
  9. Melt YOSHINO KUZU with the water, put into ⑧.
  10. Simmer ⑨ a litter, and make a YOSHINO AN.
  11. Place ③ in the vassel, and pouring YOSHINO AN from above.

WHAT DOES IRIDASHI MEAN

The IRIDASHI is a suitable for garnished sauce such as the deep-fried fish.
As the IRIDASHI uses the light color soy sauce. When doing deep- fried fish and prawns, IRIDASHI does not damage the original taste of the material.

IRIDASHI

  1. Mix 6 cups of soup stock, 1 cup of sweet sake、1cup of light color pale soy sauce ,and simmer
  2. Put dry sliced bonito into pot.

WHAT IS SASHIGATUO (INSERT SRIED SLICE BONITO)

Mix seasoning and cook once、by doing a SASHIGATUO into the seasoned soup, the taste will be even better. And It is often used to make soups such as TEMPURA – DASHI, IREDASHI etc.

Insert dried slice bonito

  1. When seasoned soup stock boiled, put a dry sliced bonito into the pot.
  2. Lower the heat once, cook it over a low heat, and stop the heat, wait until a dry sliced bonito sinks.
  3. A dry sliced Bonito sinks, filter it through a lead and cool it.

YOSHIO-Kuzu way of dissolving

Mix seasoning and cook once, put SASHIGATUO into seasoned soup, and dissolved YOSHIO-KUZU by water, then into the mixed soup stock.
Yoshino-kudzu and water are the same amount.

YOSHIO-AN (KUZU-SOURCE)

  1. Mix 8 cups of Japanese soup stock, 1 cup of Sweet sake、1 cup of Light color soy source, and simmer.
  2. When seasoned soup stock boiled, put a dry sliced bonito into the pot.
  3. Lower the heat once, cook it over a low heat, and stop the heat, wait until     a dry sliced bonito sinks.
  4. A dry sliced Bonito sinks, filter it through a lead and warm.
  5. Dissolved YOSHINO-KUZU with water, put it in a soup , and make a KUZU-SOURCE ( YOSHINO-AN)
