Tofu (Bean Cake) Three Colors dengaku

Tofu’s dengaku can be enjoyed all the year round, and it is also a cooking that can be done at home. Please cook once.

Ingredients

  •  Firm bean cued
  • White bean paste
  • Red bean paste
  • Miso mix with leaf bud
  • Tree Buds
  • Arare
  • Ground white sesame

Seasoning

  • Japanese sake
  • Sweet Sake
  • Sugar

How to make

  1. Put a gauze on a small chopping board and put tofu.
  2. Cover the tofu with gauze.
  3. Place chopping board on gauze.
  4. Place the stone and take the moisture of the tofu.
  5. Move the tofu to new chopping board.
  6. Cut tofu the thickness in half and cut further into four equal parts.
  7. Bake tofu in the oven until a little browned.
  8. Apply Dengaku white bean paste, Dengaku red bean paste, Dengaku mix with leaf bud sufficiently to tofu and bake again.
  9. Finally, Put a tree but on dengaku white bean paste, and put a Arare on dengaku red bean paste and Put a rubbed sesame on dengaku mix with leaf bud.

White bean paste for percentage of household

  1. Mix 400 g(0.88 lb) of red miso, 145 ml(0.32 lb) of Japanese sake, 180 ml(0.4 lb) of sweet sake(Mirinn), 90 g(0.2 lb) of sugar, 2 egg yolk.

Dengaku red bean paste for percentage of household

  1. Mix 500 g(1.1 lb) of red miso, 145 ml (0.32 lb) of Japanese sake, 180 ml(0.4 lb) of sweet sake(Mirinn), 90 g(0.2 lb) of sugar, 2 egg yolk.
  2. It slowly by dissolve in Double boiler about cook over a low heat for one hour.

It is delicious even if put Dengaku red bean paste in citron(YUZU)

Tamamiso Dengaku white bean paste Mixed With Bud

  1. Rub buds with an earthenware mortar well.
  2. Make a blue hotchpotch.
  3. Put a bud and a blue hotchpotch in a tamamiso dengaku white bean paste.

  1. Put a little of salt in a leaf of the spinach.
  2. Rub and grind it with bowl.
  3. Put the juice which strained in a pan.
  4. Add water, when the water boil, skim off.
  5. Move skim to gauze, cool it with water, and squeeze water.

NOTE

Each dengaku been paste eggs also put together when you adjust the seasoning, please mix slowly.
